Coconut roll


  • 3 eggs
  • 2 dl sugar
  • 3 dl coconut flakes
  • 1 dl Finax Glutenfri Mjölmix
  • 1 tsp Profiber
  • 1,5 tsp baking powder
  • 100 g butter
  • 1,5 dl powder sugar
  • 2 tsp vanilla sugar
  • 1 egg yolk

Coconut roll

Just like a log cake but with a delicious coconut flavor. How about surprising your colleagues at work? Yummy!

this is how you do:

  1. Set your oven to 250º C.
  2. Beat eggs and sugar together until light and airy.
  3. Mix in the remaining ingredients until you have a smooth dough.
  4. Spread out the dough evenly on a baking tray covered with baking sheet.
  5. Bake in the middle of the oven for about 5 minutes.
  6. Turn out the cake on another baking sheet, covered with coconut flakes.
  7. Leave to cool before removing the paper – then spread out the filling to cover the baked cake base. Roll up the cake into a log and leave it to cool before cutting it into suitable slices.


  • Mix butter and powdered sugar, then add in vanilla sugar and the egg yolk while stirring until smooth.
