Lingonberry cake


  • 100 g butter or margarine at room temperature
  • 2,5 dl brown sugar
  • 2 eggs
  • 1 dl sour cream
  • 1 dl lingonberry jam
  • 200 g (cca 3,5 dl) Mjölmix or Finax Lågprotein mjölmix
  • 2 tsp gingerbread cookie spices (cinnamon, cardamom)
  • 1,5 tsp baking powder
  • For the baking tray: butter or margarine, Finax ströbröd

Lingonberry cake

A cake with a taste of the forest´s “red Gold” - irresistible!

This is how you do:

  1. Set the oven to 175º C.
  2. Grease a baking tray (1,5 l.).
  3. Mix butter and brown sugar together thoroughly – then add in the eggs.
  4. Add cream and cranberry jam.
  5. Mix in flourmix, baking powder and spices evenly.
  6. Pour the dough into the tray.
  7. Bake at the bottom of the oven for about 50 minutes.
